Our Philosophy
Three core principles guide everything we bake
Slow Fermentation
We never rush the process. Our sourdough undergoes a 36-hour fermentation, allowing yeast to work its magic. This creates complex flavors and bread that tastes as it should.
Pure Ingredients
Every loaf starts with organic flour, filtered water, and sea salt. No additives, no preservatives, no shortcuts. Just pure, wholesome ingredients that you can pronounce and your body can recognize.

Meet the Baker
Wye Mountain Sourdough was started by Melinda, a retired homemaker with a genuine love for baking and a passion for doing things the old-fashioned way—by hand, with care, and with heart.
She grew up listening to her father tell stories, and that same sense of warmth and tradition is woven into everything she makes. For Melinda, sourdough isn't just bread—it's a craft, a comfort, and a way to share something meaningful with the people around her.
Our 36-Hour Journey
From heritage grains to your table, every moment is a step towards perfection.
The Starter
It all begins with our sourdough starter, nurtured daily for peak activity and flavor depth.
Mixing & Autolyse
Heritage grains meet filtered water. A slow rest allows the flour to fully hydrate before salt is added.
Bulk Fermentation
The dough develops strength through gentle folds every 30 minutes, capturing the mountain air.
Cold Retardation
A long, cold proof in the fridge builds the signature tang and ensures better digestibility.
The Bake
Fired at high heat in a steam-injected oven to achieve that perfect, crackly golden crust.
